Method
- Place the onion, carrot, peppercorns, bay leaves, brown sugar and malt vinegar in the slow cooker
- Add the pickled pork
- Top with water until the pork is submerged
- Cook on low for 8 hours
- Remove the pork and allow to rest for 15 minutes. Discard the poaching liquid.
- Serve and enjoy

Great for Christmas lunch, served with veggies or salad or on a sandwich.
