Slow Cooker Pickled Pork

Servings: 6 people

Ingredients
  

  • 1 - 2 kg pickled pork
  • 1 onion roughly chopped
  • 1 carrot roughly chopped
  • 10 peppercorns
  • 2 bay leaves
  • ½ cup brown sugar
  • ½ cup malt vinegar
  • Enough water to cover

Method
 

  1. Place the onion, carrot, peppercorns, bay leaves, brown sugar and malt vinegar in the slow cooker
  2. Add the pickled pork
  3. Top with water until the pork is submerged
  4. Cook on low for 8 hours
  5. Remove the pork and allow to rest for 15 minutes. Discard the poaching liquid.
  6. Serve and enjoy

Notes

Great for Christmas lunch, served with veggies or salad or on a sandwich.
Serve with Gravy with your veggies.
